Hachi Flow is an expressive, experimental Colombian coffee that showcases some of the most advanced natural processing methods in specialty coffee today. Sourced from the innovative Project Hachi in Cauca, this lot reflects a deliberate fusion of scientific precision and terroir-driven cultivation.
Unlike traditional naturals, this coffee undergoes Enzyflow Natural processing—a controlled, multi-stage fermentation designed to enhance fruit complexity while preserving clarity and balance. The result is a cup that feels vibrant and modern, yet structured and refined.
THE PRODUCER — Project Hachi’s Precision Approach
Project Hachi represents a new wave of Colombian coffee production, focused on unlocking the full sensory potential of distinctive varieties like Maragogype. Grown at high elevation in Cauca, the cherries benefit from cool mountain conditions that slow maturation and intensify sweetness.
This project emphasises meticulous post-harvest control, treating processing as an extension of cultivation. Every stage is carefully monitored to highlight brightness, elegance, and layered fruit character—pushing beyond conventional flavour boundaries.
THE PROCESS — Enzyflow Natural Unpacked
Rather than a standard natural process, Hachi Flow follows a carefully engineered protocol designed to amplify fruit clarity and aromatic lift.

On the cup, Hachi Flow opens with a lively citrus spark before transitioning into deeper berry sweetness and a soft, tea-like finish.

The finish is clean and gently structured, with a refined acidity that keeps the cup lively. This is experimental Colombian coffee done with intention—dynamic, expressive, and beautifully drinkable.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
