This coffee comes from the Cusco region of Peru, produced by the Cedrobamba Collective. Cherries are harvested from August to October at elevations between 1,800 and 2,100 meters, where volcanic soils and cool afternoon breezes slow cherry maturation and help develop deeper sweetness. In the cup we find dark plum, hazelnut and raisins with a silky texture and a wine-gum sweetness.
