-Pastel Hour is a Chiroso washed from Finca Los Tres Mosqueteros in Antioquia. This lot undergoes a multi-day layered fermentation, where each day’s harvest is added to the same tanks before being washed and dried slowly in solar parabolic dryers. This process builds aromatic depth and sweetness while keeping the cup very clear. Tasting notes of mint, verbena, and purple florals.
